I don’t know about you, but I don’t get that much time to make my own packed lunch to take to work as I’m more often than not working on new content for my blog on an evening! Lunchtimes usually consist of nipping out for a sandwich and quite a few snacks… yes I do have a sweet tooth if you’ve not already noticed! Lately, I’ve been getting really bored of shop bought sandwiches and wondered what healthier and more nutritious options I could have!
I was recently asked if I’d like to get involved with Baxters and their Souper Swap challenge, it was just the thing to get me eating a healthier alternative to sandwiches for lunch, I couldn’t wait to get going!
I received enough soups for 2 weeks worth of lunches; 5 Hearty and 5 Vegetarian options. They’re all gluten free and below 300 calories per serving! Each soup contains at least 1 of your ‘5 a day’ and most of them have at least 2! For me, this is great, as I don’t often abide by the ‘5 a day rule’!
I know what you might be thinking… does a tin of soup really fill you up enough? Baxters have carefully made them so they are filling and wholesome and packed full of healthy goodness! But if you still feel like you need something to go with it, a wholemeal pitta bread would work well to give you some extra carbs.
Not all of the Hearty range contain meat, there’s something to cater for most tastes in the 10 different recipes within the range! My personal favourites were Beef bean and vegetable and Chicken and country vegetable. But, if they’re not quite your thing they also do a Vegetarian range that has 11 different recipes!
I found the Vegetarian soups just as filling and tasty as the hearty flavours, even for an avid meat eater like me! I really enjoyed the Spicy parsnip and Garden pea and mint in this range, both full of flavour and filled me up well.
If the Hearty or Vegetarian ranges are not your thing they also do a Favourites range, that contains all your well known flavours such as Tomato, Chicken and Scotch broth! If all that wasn’t enough, they also do a Chef selection range of soups, that include rich and indulgent flavours such as Cullen skink, Crab bisque and Scottish venison.. this is making my mouth water as I write! So you really are spoilt for choice and there’s something for everyone!
For me, soups are a perfect lunch for this time of year in this colder weather! I mean what can be more comforting than a warm tasty and delicious soup? Well, I know what I’ll be having for my lunches for the next few weeks at least until it warms up!
